The pattern

Breweries talk in numbers, and it shows

Most hard seltzer capacity in the US sits inside breweries. They already had fermentation, filtration and canning; seltzer used the same equipment. And breweries have a culture of quoting batch sizes publicly — a brewer will tell you their brewhouse is 30 barrels the way a printer tells you their press size.

That culture is why this category has the highest share of published minimums we have measured. It is also why the units are inconsistent: barrels for the breweries, gallons and cases for the beverage plants. A barrel is 31 US gallons, roughly 13 cases of 24 × 12 oz.

The practical consequence is that you can shortlist this category before making a single call — which is not true of kombucha, cold brew, or most state lists.

Why this page is different

Alcohol licensing is not optional here

Every facility that fills hard seltzer needs federal TTB authorisation, and usually state licensing on top. That is why the Alcohol column on this page is dense with Yes rather than the blanks you see on other category pages.

It also narrows your options in a useful way: a facility that is licensed for alcohol has already absorbed a compliance burden most co-packers avoid. If your roadmap includes an RTD cocktail or a spirits-based line later, choosing a licensed facility now saves you moving.

This is the one category where you can build a real shortlist from published data alone. Use it — and if a facility here does not publish, that itself is information, because its competitors do.

Before you call

Two things worth reading twice

A barrel is a batch size, not always a minimum. We verified every barrel figure on this site against its source in August 2026 and removed four that turned out to be capacity ranges rather than customer minimums. If you see a barrel number elsewhere, check which of the two it is before planning around it.

Malt-based, spirits-based and sugar-brew seltzers are not interchangeable. They carry different licences, different tax treatment and different shelf placement. Ask which base a facility actually runs before assuming yours fits — the website rarely distinguishes.
