The pattern

The people who pack it learned by brewing it

Three of these fourteen started life as kombucha brands and turned into co-packers: Circle Beverage was Circle City Kombucha before going co-pack only in 2020, Sterling Beverage was Bootleg Bucha, and SOMA still carries its own name. That is not a coincidence. Live fermentation is unforgiving — carbonation keeps building, alcohol can drift above the legal threshold, and a filler set up for a still product will not cope.

The rest split into two groups. Organic specialists like Rocky Mountain Cultures and FedUp Foods, who handle jun and other fermented drinks alongside kombucha. And large generalist co-packers — Big Brands, Matrix Bottling, Newport — who list kombucha among many categories.

The practical read: if your kombucha is unpasteurised and still active, ask specifically how they handle refermentation and ABV drift. It is the question that separates the two groups.

Why this page is different

One published figure out of fourteen

Across the 217 facilities we track nationally, 27 publish a minimum run — about one in eight. Kombucha runs below even that: one of fourteen.

That is Organic Food Incubator in Bloomfield, New Jersey, at 600 units, roughly 45 cases of twelve. It is also one of the smallest published minimums anywhere in our database, which makes it the obvious first call for a brand testing a first run.

A facility that lists kombucha among twenty categories is telling you it can fill the container. It is not telling you it understands live culture. Those are different questions, and only one of them is on the website.

Two things worth reading twice

SOMA Kombucha is not taking new clients. It is still operating and still packs kombucha, jun and kefir, so it stays on this list — but do not build a plan around it without confirming that has changed.

Alcohol capability matters more here than you would expect. Kombucha ferments in the can. Several facilities on this list hold TTB licences, which means they are equipped to handle a product that may cross into regulated territory. If yours is unpasteurised, that column is not decoration.
