Eleven facilities, from a 1946 family bottler in the Hudson Valley to farm breweries near Syracuse and a canning specialist in Saratoga Springs. Only one of them puts a minimum run on its own website — the lowest publishing rate of any state we track with ten or more facilities.
The published minimum first, then the rest alphabetically. Two additional facilities we found in New York are not listed here: one whose founder's obituary describes the business in the past tense, and one whose entire website has returned 404 for weeks with no independent confirmation it has closed. We don't publish a facility as active until that's resolved.

Downstate and the Hudson Valley run on scale: Brooklyn Bottling (1946), Mayer Brothers (1852) and Adirondack Bottling — Polar's contract division — each move millions of cases a year of private-label soda, juice and water. None of them publish a minimum; at that volume, the conversation likely starts well above what a first-time brand needs anyway.
Upstate is craft alcohol: FIFCO's Genesee Brewery in Rochester, Meier's Creek near Syracuse, Ninth Planet in Saratoga Springs, and Great South Bay out on Long Island. These are exactly the kind of facilities that publish minimums in Wisconsin — but here, only Great South Bay does.
The practical read: if you're a large, established brand, New York's scale bottlers can likely take you regardless of the missing numbers. If you're small and shopping by minimum run, you'll be making calls that Wisconsin's four transparent breweries would have saved you.
Across the 217 facilities we track nationally, about one in seven publishes a minimum. New York publishes at roughly one in eleven — worse than the national rate, in a state with six alcohol-capable facilities out of eleven.
Compare it with Wisconsin: also craft-brewing-heavy, also ten-plus facilities, but four out of ten publish. Or Pennsylvania, next door: two of nine.
A state with this much brewing history and this little published data tells you something too: ask for the minimum on the first call, because the website won't have it.
Great South Bay's 30 barrels is published in their own unit; the ~930-gallon figure alongside it is our conversion, not a number the brewery states. Ask for their unit when you call.
"Very low minimums" and "as small as a few cans" appear on Empire Beverage Solutions' and Ninth Planet's own sites — real claims, but neither names a figure. We don't convert marketing language into a published number, so both show as not published here.
